Pasta and comfort food go hand-in-hand… so why not bring smiles to faces and make a day out of this delicious family meal. Have a great big pasta making party! We had a 4th birthday and pasta making party with Pasta ‘n Play for my son (before London’s lockdown) and it was an enormous hit. But why not adopt this idea and make pasta wherever you live?
Lucikly, we have some great recipes from the lovely Vittoria of Pasta ‘n Play to share with you. And we thought a rainbow pasta (with all natural ingredients) would be so apropos! Bring colour to your day. My son and his friends loved the coloured pasta, and got so into the steps of kneading, rolling and running the dough through the machine. They were so focussed and so proud of their delicious end results too. They wanted to make more pasta the next day!

Today we share her Colourful Tagliatelle and her Nonna’s Sauce.
For the Colourful Tagliatelle you’ll need:
- 150 gr white flour
- 150 gr semolina flour
- 3 eggs
Mix the flours and make a fountain with a big hole in the middle. Put at the centre of the fountain the eggs and start mixing the eggs with a fork. Once they are mixed thoroughly, start bringing in the flour. When all the flour is mixed in start kneading the dough with your hands. Knead on a flour-dusted surface for at least 10/15 minutes for a perfect result. Make a nice and smooth ball. Wrap in cling film and let it rest for 30 minutes.
Divide your dough into a smaller ball. Flatten the ball with your hands so it can fit the thickest setting of your pasta machine. Use the thickest setting three times and each time fold the dough like a wallet. Use all the settings up to the last one once. Lay out the layers on a flour-dusted surface and cover with cling film.
To make the colourful stripes:
-blue spirulina, beetroot, tomatoes, turmeric, squid ink, sweet potatoes, green spirulina, dragon fruit, harissa, peas, spinach, and then you can mix the colour between themselves and create different shades
Run the dough up to a thin setting (number 6 or 7 depending on the pasta machine model) on your pasta machine (Vittoria recommends this pasta machine). Keep the yellow sheet as a base. Dust the other sheets with flour and run the sheet through the tagliatelle settings. Gather the tagliatelle to a flour-dusted surface.
Make the rainbows on the yellow base and roll with the rolling pin, pass it through the machine and then the tagliatelle setting.
Vittoria’s Nonna’s Signature Tomato Sauce
- 500 gr tomatoes
- 1lt vegetable stock
- 1 onion (medium)
Firstly, make the passata. Bring a small pot of water to boil. Boil fresh juicy tomatoes for 5 minutes. Cool them down. Peel, deseed them and cut them into small cubes. Blend.Prepare the sauce, by chopping half an onion and sautéd it in butter. Add tomatoes passata. Fry for 5 minutes and add half a litre veggie stock. Let it cook for 45 min/ 1 hour over medium fire.
